The pub’s story
Panda & Sons is a modern New Town cocktail bar inside an older Georgian property, and its two histories should not be confused. Historic Environment Scotland attributes the wider 79-80 Queen Street corner tenement to James Tait in 1790-92 and records its Category A designation. The bar itself opened in November 2013. A contemporary founder interview described a five-year-vacant basement transformed over three months into a speakeasy-and-vintage-barbershop concept tied together by a fictional Panda family. The street-level barbershop, bookcase door and Prohibition tale are therefore theatre, not inherited premises history. The modern record is still substantial: Panda & Sons developed Switching around 2019 and now presents sub-zero research through its Brain Melting Society and Transcend menu. Europe’s 50 Best Bars ranked it number 20 in 2026 and awarded Transcend the Siete Misterios Best Cocktail Menu Award. The official site confirms 79 Queen Street and a current phone number, but publishes no hours; conflicting schedules elsewhere are not promoted as current fact.
